In a large mixing bowl, combine eggs, cheese, parsley, salt, and pepper. Set aside. -

In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Add the lamb and onions and cook, stirring occasionally, until the meat changes color and is about medium rare, about 5 minutes. -

Stir tomatoes and vegetables and continue cooking for another minute. -

Transfer the lamb and vegetable mixture to a large enough baking dish (you can also use a large cast iron pot) and spread the egg mixture evenly Pour on top. -
