Prepare materials. -

Wash the barley and soak it in water for 2 hours. -

Put the lean duck meat into cold water in a pot and blanch it. -

After boiling, remove the lean duck meat and wash away the foam. -

Cut the winter melon into large pieces; (leaving the skin on the winter melon will help cool down the heat). -

Add enough water to the soup pot, put in the lean duck meat, bring to a boil and skim off the foam. -

Add other ingredients including barley, ginger slices, tangerine peel and winter melon into the pot, bring to a boil, then reduce to low heat and simmer for 1.5 hours. -

Finally add salt to taste and the soup is ready to drink~
