Wash the small potatoes and chives

Peel the potatoes and cut into small pieces.

Put the base oil in the hot pan, add the potato cubes and stir-fry over medium heat 2 minute.
Note: It is best to add some chicken fat or lard, it will be more fragrant.

Remember not to add dark soy sauce at the beginning, otherwise the color will be very dark.

Add boiling water, the water level is slightly lower than the ingredients.

Simmer over medium-low heat for 15-20 minutes.

Taste the taste, and when it is almost done, reduce the juice over high heat. At this point, the color feels just right and there is no need to add dark soy sauce.

When ready to serve Sprinkle a handful of chopped green onion

Stir-fry for another 10 seconds to break the green onions.
