Peel and wash potatoes, cut into desired lengths and soak in starch in water. -

Put water in a pot to boil, then put the potato strips into the water and cook for about a minute, then remove the potato strips to control the water. -

Spread starch over the potato strips that have controlled water, so that each potato strip is evenly coated with starch. -

Heat the oil to 80% heat, add the potato strips, fry until they are set, and then use chopsticks to break up the potato strips that are stuck together. -

Tips
The step of coating the potato strips with starch must not be omitted. When frying the potato strips, no matter how you fry them, they will not be splashed with oil.
