After the pot is heated, add oil and add green onion and ginger to the pot. For the vegetarian version, skip the meat and just add tofu. If you like it spicy, you can add dried chili peppers at this step.
Add minced meat and turn to medium heat. If the heat is too high, the minced meat will directly clump together and become oily.
Stir out the oil patiently over medium heat. Animal fat is needed to stir-fry the subsequent aroma of turmeric powder.
Add cooking wine and light soy sauce

Add the tofu and continue to stir-fry. It’s time to test the effect of the non-stick layer of your pot. Don’t worry about the pot being sticky, just soak it in hot water. Wash off.
If the color is too light, you can add more light soy sauce. If the tofu has a beany smell, you can add some balsamic vinegar.
Fry the minced tofu until dry and add turmeric powder and black pepper powder.
Continue to fry until the turmeric powder is fragrant and add salt. If you like it spicy, you can add red pepper powder for a better color.
Add oyster sauce or chicken powder before serving
Sprinkle with chopped green onions and serve
