Soak black fungus in warm water. -

The dried yuba is ready. -

Fold into sections by hand. -

Heat the pot, add more oil, and fry the yuba in small portions. -

When frying the yuba, the fire should be lower to avoid burning. Just fry it until it looks like the picture above. -

Boil water in a pot, pour in the yuba and blanch for 30 seconds. Remove. -

Blanch the yuba and put it in a basin. -

Blanch the black fungus in boiling water for 2 minutes. Put the black fungus and yuba together, add minced green onion and chili powder, heat the oil and pour it on the green onion. Add salt, soy sauce, vinegar and chicken essence. Mix sesame oil. -

Sprinkle with chopped green onions and serve. A delicious cold dish is ready.
Tips
When blanching the yuba in water, don't blanch it for too long to avoid it becoming mushy and unpalatable.
